Caesar Salad Summer

It's true, back in 2024 I called it Caesar Salad Summer and it was on point! We had so much fresh lettuce, and pairing that with delicious homemade croutons, some ready-to-eat grass-fed meat and dressing I made ahead, we had lots of Caesar salad nights and they were delicious! I have to admit, it was also the salad of summer 2025, but not the dish of the summer. I'll have to share that with you before next summer, lol!


Caesar Salad Dressing

I use this recipe loosely. Loosely meaning, it helps me remember so I don't forget any important ingredients, but in usual TSB style, I don't follow it directly. Besides, I make big batches or at least it's based on whatever size my avocado mayo jar is--and you know it's big when I get it from Costco, lol!


If I'm making a small batch or have somehow used the mayo for something else and only have half a jar, I'll use a small cup and handheld frother (like in the picture below). Otherwise, I'm using a big bowl and real whisk and I store it in fun bottles. It makes it easy to squirt on breakfast sandwiches or leftover grass-fed meat for a quick and tasty lunch, too.


Here's what I use for the dressing and taste along the way (sans spoon double dipping):


I typically don't need to add salt to the dressing because of the sauces. I also don't prefer to add cheese into the dressing and like to sprinkle it on top, instead.



Caesar Salad Croutons

I've had several non-optimal attempts at sourdough bread and have now found the perfect use for those loaves that don't rise all the way or that are shaped weird-- CROUTONS! They are perfect tossed in olive oil and rosemary garlic seasoning. I like to make my own sometimes by mixing:



Lettuce

I mentioned the abundance of good lettuces we have through the summer and we're so grateful to our farmers! They actually grow in the dirt, which may sound weird if you aren't aware how much hydroponics are used (and who knows what they're pumping into that water, iykyk).


My favorite lettuces are Butterhead or Romaine, the latter is traditional for Caesar salad. But if we're talking all time favorite lettuce that I'd have it everyday in a salad if I could find it, that would be Little Gem!

After chopping it up I soak it in filtered water with a couple drops of CitriDrops Dietary Supplement and give it a good swirl (code: SATIATEDBLONDE). I use CitriDrops because it "combines four different citrus seed extracts" and because "citrus seed extracts have been studied and safely used for decades for their anti-microbial and anti-fungal properties."



Protein

We've made this with many different kinds of meat, but by far the quickest is the sous vide grass-fed steak from Costco. We just give it a quick slice into thirds and it's good to go. I top it with Costco's Parmigiano Reggiano, that we grate ourselves.



It's a super quick meal if we forget to plan something else or invite people over last minute!
