When we found this birria taco seasoning at Zoe's, we knew what we were going to do with it! Birria taco salad is a delicious and quick dinner idea...for Tuesdays or any day! Just a note, birria is traditionally a special slow meat stew/soup. Read all about the first place I had birria here.
This is NOT traditional since it's using a different type of meat, but here's how I did it:
Cook up grass-fed ground beef in a skillet (I like to add whatever fat we have on hand to cook it in)
Generously sprinkle the taco seasoning over the meat.
Add to a bed of lettuce - these are Muddy River Farms greens
Top with manchego cheese (I get mine from Costco, it's a Spanish sheep's cheese)
Top with Veggie Confetti - I like their pickled onions and jalapenos!
