We make our own stock out of leftover bones; from turkeys, rotisserie chickens, lamb legs, etc... So, that was used at the base for this soup! Luckily, we made some the previous night. It was right before we (my hubby & I) left to travel home for the holidays and we wanted to clean out our fridge. So, limelight soup was born! My hubby had the idea to do a twist on tortilla lime soup (sans tortilla strips). I told him I'd never had lime soup before and he said it was about time! So, here's how we did it, using what we had on hand:
Ingredients & Directions:
8c. homemade stock- bring this to a boil; there's nothing better than homemade, but if you don't have this on hand, I like this brand (the chicken mushroom is my fave).
1/2 c. rice- it was all we had left, but ended up being the perfect amount
5 thinly sliced radishes
1 head of broccoli, chopped
1/2 poblano pepper
3 green onions, chopped
2 shallots, chopped
3 carrots
Simmer for 15 minutes
We topped each bowl with the juice of 1 lime, a sprinkle of cilantro and more green onions, some sprouts and a pinch of Icelandic Flake Salt (Code: SATIATEDBLONDE to save!). My hubby added hot sauce too!
