I enjoy beets in any form: boiled, roasted, fermented (kvass anyone?!). So, I fully intended to like the beet powder I purchased. I did not think I would fall in love with it and start putting it on everything, but that is exactly what happened!
Honestly, I enjoy eating the powder right off a spoon! The subtle sweetness comes through more than the typical earthy flavor (which I enjoy also!).
I created a salad dressing that I am putting on MUCH more than salad. Here's how I make it:
Ingredients and Directions:
2 tsp beet powder
1.5 tbsp olive oil
1 tbsp apple cider vinegar, fresh squeezed lemon, or this lemon juice
2 shakes of celtic sea salt
Whisk until mixed together.
This is pretty tart, so based on taste, cutting back on the vinegar or lemon can change the flavor dramatically (if it's too intense, but I like it bite-y)!
Tonight I made this mix and tossed some roasted broccoli in it--so good!
